Outer Island Oysters are grown on five acres of open water in the high-current environment of Long Island Sound, just southwest of the Thimble Islands and in the shadow of Outer Island. It’s a unique setting where strong tides and cold waters shape oysters with clean, briny flavor.

Our oysters begin their journey in a hatchery, where they are nurtured until they’re just 6 millimeters in size. From there, they’re placed into cages on the farm, where they remain for their entire lives. Suspended in moving water, the oysters are constantly tumbled by the Sound’s natural currents — a process that helps them grow deep-cupped shells and the distinctive character of the place they’re raised. They are periodically sorted and cleaned until they are ready for harvest.
